BENNETTSVILLE — For owner Elizabeth Rosser, Thursday’s grand opening of Buffy’s Lunchbox, located at 108 S. Marlboro Street, is the culmination of over seven years of hard work, dedication and faith.
“I started seven years ago with a little grill and grocery in Blenheim before transitioning into my food truck, the Pee Dee Sandwich Shack,” says Rosser, explaining all her plans were put on hold with the arrival of her daughter four years ago.
“Now that my daughter has gotten older, I really want to get back into the food service industry — it’s my passion. I love to cook and make people happy,” shares Rosser, adding she hopes to one day involve her daughter in the business.
“I hope when she is older, she will also get into cooking and we will have this business to share together,” says Rosser.
She adds that the goal of Buffy’s Lunchbox is not only to offer the people of Marlboro County another option of somewhere to eat, but also to spread the gospel of Christ.
“The people of Marlboro have blessed me, and I want to pay it back by serving good food and spreading the gospel of Jesus. He is the reason we are all here today — He made today possible,” said Rosser.
Buffy’s Lunchbox will serve a variety of specialty and traditional sub sandwiches, soups, salades, hot dogs and more.
“I’m looking to get back into serving hamburgers. Burgers were my specialty in Blenheim, and my regulars still ask for them,” she said.
A special delight offered at Buffy’s is lemonade.
“We will offer a variety of lemonade flavors that will change seasonally. For spring we have Peach Lemonade,” said Rosser.
Many city leaders and officials were on hand to welcome the new business to Bennettsville, including Mayor Tyron Abraham and Marlboro Chamber Chairman Gage Speight.
“I am happy to have Ms. Buffy here working in the city of Bennettsville. I’ve already tried out the subs and they are a treat,” reviewed Mayor Abraham.
Speight shared that he too has already eaten at Buffys, saying he highly recommends the homemade Chicken Salad.
“We are very excited to see another business moving into Bennettsville, especially another dining option. It shows how our community is thriving and continuing to attract new businesses and prospects to the area. The Chamber is happy to welcome them all,” says Speight.
